Parmesan Chicken Burgers by Tracey's Culinary Adventures

I'm excited to announce that today's Guest Recipe of Chicken Parmesan Burgers comes from Tracey's Culinary Adventures. I found Tracey quite accidentally, actually, a couple of weeks ago when I resolved to organize my Foodbuzz profile and proceeded to go through all 4,000 messages in my inbox dating back to April of this year.


While I was archiving recipes, I began to notice Tracey's posts more and more as keepers. To make a long story short, I have an archive full of Tracey's awesome recipes, including this one, and I am now an avid follower of her blog. It's astonishing the treasures we miss in our busy Foodbuzz inboxes (those of us who belong).

Of all of Tracey's posts, I was most interested in this one (for now) because, frankly, ground turkey has gone up in price while decreasing in quality since the ongoing contamination scare. I'm finding products are limited including the Italian sausages I normally buy. Ground beef hasn't been remarkable in quality either for the prices it's been reaching, or maybe it's just me...Either way, ground chicken sounded like a great alternative and let me just say that these burgers are an excellent change of pace!

The recipe is so easy to assemble - this post will be as short and sweet as the procedure to make these tasty burgers. Here's some fresh parsley I picked from my potted garden.

Here is a finely diced shallot - half a shallot actually. It looked like the right amount proportionate to the rest of the recipe. And that's all the prep there really is to do.

You can get the exact recipe at Tracey's Culinary Adventures. Basically, this is the parsley, plain bread crumbs, some Italian seasoning, Parmesan cheese, garlic, the shallot, and a little salt and pepper mixed together.

Make sure this is mixed up well before adding the chicken to make sure the ingredients get evenly distributed throughout the burgers, and so you don't have to handle the meat so much. Add the chicken to this and work the ingredients in.

Shape the burgers and refrigerate them for about a half an hour. In the meantime, I put steak fries in the oven and started to cut up some broccoli for steaming. By the time the fries were done the burgers were ready to go in.

Broil the burgers (I added a wire rack to the pan at this point) for 5-6 minutes on the first side, then flip and broil for another 4 minutes or so.

That's it...so simple!

I topped my burger with a little homemade pizza sauce we had leftover from Saturday (Saturday is pizza day!) and shredded a bit of mozz. I was clever and toasted the buns on the bottom rack of the oven while the burgers were broiling (actually, I'm lucky they didn't burn).

I'm definitely going to make these burgers again, and I hope all of you try these at home. One thing I especially liked was the broiling method of cooking. It made it very fast and hands-free, but it also put a slightly thin brown crust to the burger without burning it like I think a pan or grill would have done.

  1. First of all, the picture of the raw chicken burger is GROSS! But this isn't my blog so what can you do?

    Secondly, these burgers were actually quite tasty though mine was a lil' burnt on the bottom. (Notice the NoOb's wasn't? Uh huh.)

  2. I actually think the raw burger looks darn good and the cooked even better. I love the idea of putting the pizza sauce and mozzarella on there. You could have broiled the cheese a little too for a pizza perfect burger. Great job.

  9. I order chicken parm heroes all the time an never considered a burger. I imagine this is very good. I have no issues with raw meat. Looks fine to me.
